OMG... BBQ Loaded Baked Potato

So... now that I live in Southern Missouri... one of my favorite foods, if not the top favorite food I have, is a loaded, BBQ, baked potato. Now, you may have had baked potatoes before, and you may have had them loaded, but, if you have not ever had them BBQ LOADED, you do not know what you're missing!

I have two favorite places to go get them. My top, most- favorite place, is called BBQ Station in Cassville, Missouri. It has other great food (I've only tried it off other people's plates- do NOT mess with me and my potato), but their Loaded BBQ Baked Potato is AaaaaMmmaaazzzzzIIiiiNNNNnnGgggg! Need I say it again, louder?! It is SO good! I visit there at least once a week, but I could honestly go at least every other day (its about a 30 min drive from my home). The gigantic potato is topped with a generous helping of butter (I will never watch when they ask if I want it. Of course I want it. I just don't want to see them when douse it all over the potato!), sour cream, shredded cheddar cheese, and your choice of meat- brisket, pulled pork, or chicken. I'm completely in love with their brisket, which they chop up and place on the potato... so I get this standard on mine every time. I also ask (well, I used to ask, now they just know!) for green onions/scallions on mine as well. You cannot go wrong. They serve it up and at each table, you have your choice of 2 BBQ sauces, a sweeter sauce, and a spicier sauce- either are good. I go for the spicier of the two (not too spicy, their "original"). I've never looked at the bottle of sauce before and after, but I'm guessing I use a good half of the bottle every time. I like it saucy, what can I say?! When you get a bite of all of the toppings of the potato, with the potato... the rich butter, cool sour cream, creamy cheese, melt-in-your-mouth BBQ brisket, scallions, and the sauce? It is pure heaven.  (pictures to come!)

My second favorite BBQ place around SW Missouri? A little place in the town that I now live, Monett, Missouri. Big Baldy's Backwood BBQ is the name of this little joint, and it is just fabulous. All of the pictures on this posting are from the Loaded BBQ Baked Potato I had to-go today. The potatoes from here are GIGANTIC. As you can tell, they fill up the whole white Styrofoam container! Their potatoes also come standard with butter goodness, sour cream (at least 2 dollops... at least), onion, scallions, THREE meats (chicken, pulled pork, and beef brisket), and topped with bacon and MELTED cheddar cheese all over the top. It is amazing to look at! Their potatoes come with your choice of sauce, and they have four different kinds to choose from- mild, medium, mustard, and hot. I love the medium. Just enough heat, while not burning my mouth to take away from the taste of the food! In this potato, you just keep discovering all the layers. It seems to take forever to get to the bottom- where the potato is! SO good!

It probably won't be QUITE as good as the two here, but, hey, it's better than nothing, right? I've made these at home quite a few times, and, while I do not have the smoked/BBQ taste, I can still make them taste pretty darn good!
Loaded BBQ Baked Potato- @ Home Recipe!

• Extra large, russet potato
• Butter
• Sour cream
• Shredded cheddar cheese
• Onion/scallions (optional)
• Bacon, crumbles (optional)
• Shredded meat. Your choice, cooked in the oven or slow cooker, until falling apart ( I like to do a pork loan in the slow cooker- Crock-Pot- all day, until it just falls apart)
• Your favorite BBQ sauce

Bake the potato in the oven, or, if you're low on time- pop it in the microwave until soft (around 10 minutes for an extra large).

Top with butter, meat, and onion. Then, add cheddar cheese and sour cream. Finish with bacon crumbles and scallions, if using. Finally, to make it a BBQ potato... add a generous helping of your favorite BBQ sauce. (If you're anything like me, you'll have to add more about 10 more times until you're finished!) A fabulous meal!

Valentine's Day Countdown- Valentine's Day Gift Ideas, 1 Day Remaining

Depending on if you're married, engaged, dating, single, or somewhere in between, chances are you have at least one person whom you have to buy a Valentine's Day gift! Usually it's your loved one, and it can take a lot of work to figure out "what to get them"! I know... it seems every year, for the past (at least!) 10 years, I've had a steady "someone" to buy for on Valentine's Day. Now, that person changed throughout the years... :), but there was always still a "someone"!

So... lets get down to it! Some fabulous gift ideas for the man or woman in your life.

NOTE: Cards are the obvious given! Make it a good one on this special day!!!

Buying gifts for MEN on Valentine's Day can sometimes be one of the hardest things to do! Think about what he likes, activities he enjoys, his favorite hobbies, etc. Chocolates, homemade cupcakes, new lingerie (not ON him!), and decorative Valentine's are some basic ideas... But, for new, fresh ideas? Lets start here!

• Tickets to a game. If he into sports? Have a favorite team he follows? This is perfect. Go with him or let him take a friend. 
• Massage. Stressed from work, constantly? Sore muscles? Treat him to a body massage at a nice salon!
• Movie tickets. Wayyyy into movies? Never misses a new release? This is the perfect, and can be romantic, gift for the movie lover. If he rent's more movies than he visits the theater, how about a subscription to an online movie rental store, such as Netflix. Or, to stick with the movie theme, I bet he would LOVE a new Blue-Ray player to watch his movies!
• Gym membership. Does your sweetie love to workout and stay in shape? Does he want to get back into it? Renew his gym membership if he already has one, or start him one!
• Beer. Need I say more? If you're man's a beer drinker, he would love a beer gift set.
• Coffee card. This gift card is perfect! Stop by the local coffee joint on his way to work every morning? Make coffee at home but wishes he could get coffee from a little coffee shop more often? This is the perfect solution, and one of my favorites (to receive also!). He will think of you every time he gets it out of his wallet, for the life of the card!
• Homemade coupon book. This is also another favorite of mine, and one that I've used a few times. Hand make it, or make one up on the computer and print it out! Some good "coupons" are: massages, cooking his favorite meal, and going to a movie or event of his choice.
• Organize his closet/music/movies/house. This may sound somewhat silly on first glance, but I do believe it is one of the best things you can give him. Does he wish all of his music was in one place, or organized correctly? Do it for him on his computer. Does he want his movie collection in alphabetical order but doesn't know where to start? He would be thrilled you took your time to do it for him. Does his closet/house look like a tornado hit, or is just not "organized"? Do it!!! I've done this before, and, let me tell you, I know, even a few years later, that it was still talked about as THE BEST gift ever!
• Golf balls or equipment! Hey, spring is coming, right?
• What man doesn't love a good steak? And hopefully he'll cook one for you, too!
• Shoes! If he loves tennis shoes, like a lot of men, these shoes are perfect! See the "My Favorite Place to Buy Shoes" banner at the bottom of the blog for the BEST place to buy! Free overnight shipping, too!

For WOMEN, this can be a tricky day. Either you buy a gift she loves... or, well, you fail. :) The good news is that most gifts, as long as they come from the heart, will be well received! Chocolates, flowers, and jewelry are the standard Valentine's Day gifts. Men- need help? Start here!

• Romantic weekend away. This is BY FAR my favorite thing... ever... to receive. It is so exciting to go somewhere new and different with your love one. Fly away to somewhere warm, or, take a road trip, even a few hours away. Just getting outside of where you know is great. What better, relaxing gift to receive?
• Cozy pajamas. Lingerie= for him. But, a pair of cute, comfy pj's?... perfect for the girl on your list!
• Year of love. Find a nice, pretty vase. Cut out 365 pieces of paper, and on each one, write something special about her, a reason you love her, a word to describe her, or something you want to do in your relationship together. It may seem like a lot of work, but, trust me, this one would be a home run.
• Personalized. If you plan on getting her jewelry, have a special message engraved on the back or inside. Does she have a favorite piece of jewelry? Sneak it out to get engraved. She will love that every time she looks at something she loves to wear, you will pop up in her mind!
• Hair/nail/spa gift certificate. Do you know she loves to get her hair done? Her nails? Does she sometimes "go without" in this regard? If so, she would adore that you thought of her "girly" needs with this gift card. And, she'll come home all "prettied up"- for you!
• Photograph of the two of you. A special photo of the two of you... get it blown up, (changed to black and white if you'd like), matted, and framed. This is so special for her home or office wall.
• Year calendar. Visit Shutterfly to upload your digital pictures, choose a layout for your calendar (they have these pre-made), add in any special dates, and you're done! Have it mailed to you, or see if you can pick up at a local store.
• Most any woman would love a gift basket full of little things to make her feel pampered and special!
• Start her days out right and with a smile on her face, as she pours her coffee into an "I Love You" coffee mug. How thoughtful are you, boys!
• Does she ADORE purses? If she's anything like me, the answer is probably, YES!! She will be completely surprised if you buy her a brand new, designer handbag. She probably won't believe that you took the time and effort in a woman's store to pick one out for her!

Valentine's Day Countdown- Valentine's Day Food, 2 Days Remaining

FOOD!!! On Valentine's Day, this is one of the best things... going out for dinner somewhere romantic, cooking or having someone cook for you... Or, a combination of these two! Whatever you decide to do on this February 14th day... it better taste good! Today I'll give you some good ideas for the meals (and snacks!) throughout the day, as well as other sources full of great recipes and ideas!

Breakfast

Surprise your loved one with his/her favorite breakfast in bed! Or, since Valentine's Day falls on a weekday this year (and most people will have to work), why not pack them a little V-Day breakfast on the go? Get or make their favorite coffee, juice, breakfast danish, eggs, ham/sausage/bacon, and they will start their day with a huge smile- feeling loved!

One of my all-time favorite foods to make in the morning is a breakfast burrito. Quick, easy, and yummy... Here is a "recipe" to make them!

Breakfast Burrito

• 1 large flour tortilla
• 1 1/2 teaspoons each of butter & vegetable oil
• 1/2 cup hashbrown potatoes (thawed) (* I like the "o'brien" kind!)
• 2-3 eggs
• Mushrooms, onions, peppers, tomatoes, olives (optional) (*Use whatever you like!- all, or none!)
• 1/4 cup shredded cheddar cheese
• Salt and pepper to taste
• Crumbed bacon (optional)
• Browned ground sausage (optional)
• Chunked ham (optional)
• Hot sauce/salsa/sour cream (optional) (* I use a ton!)

Warm the tortilla in a large skillet over low heat. (* OR- microwave for about 30 seconds, right before filling)


 If you are going to add meat to your burrito, cook in a medium nonstick pan. Fry the bacon, then drain and crumble. Brown the ground sausage, then drain. Cook a small piece of ham, then cut in to pieces (or, for quick and easy ham additions, buy deli ham and eliminate the cooking!) . Whichever one of these (or all!) you choose, start with this step first.

Then, in another small-medium nonstick pan, heat butter and oil over low heat. While the pan is heating, whisk the eggs in a small bowl until blended but not frothy. When the fat in the egg pan is hot (less than a minute), add the hash-browns and cook until they are beginning to brown. Add your choice of mushrooms/onions/peppers/tomatoes, cook for one minute with the potatoes. Then, stir and pour in the eggs.

Let this mixture cook (on medium) until the eggs begin to cook around the edges, stirring occasionally with a rubber spatula. Eggs and done when they are no longer "wet", but still moist and soft. Add salt and pepper to taste.

On your warm tortilla, fill with this egg/potato mixture (just like you would a taco), add your meat (if using), then top it all with cheese. Fold up the bottom and top of the tortilla over the filling, fold in sides, and roll up tightly.

Serve with salsa, hot sauce, and/or sour cream, if desired!
*If making more than one, simply double (or triple!) the recipe! Enjoy.

Lunch 

For lunch on Valentine's Day... keep it simple. More than likely you are both busy during the day, and are planning a dinner out at night. So, for Valentine's Day, why not go pick up a quick lunch at a local deli? It is perfect to spend the time together, but not completely stuff yourself.

Dinner 

This meal is probably where you'll eat the most! This is the most romantic meal of Valentine's Day usually. 

If you're going out, make sure to book your reservation in advance! This is one of the most popular nights to go out to eat, so reservations go fast! Go to you or your significant others' favorite restaurant, or try a new one together! A candlelit meal with soft music playing in the background is often the most romantic... but YOU know each other best... if you're surprising him/her, do what you know they'd like! It's your day as a couple! 

If you're planning on staying in and cooking together or cooking him/her a meal, here is another great page full of Valentine's Day dinner recipes! When doing this, make sure you dim the lights, turn on a little background dinner music (view our "music" post for more ideas!), and light some candles.

Dessert

This is something I always look forward to on Valentine's Day, because dessert is typically more romantic to eat together and share! Most restaurants have specials for dessert on Valentine's Day, so make sure you check them out! Even if you're stuffed- it's a special day, right? :) If you're planning on staying in, make sure to include dessert on the menu.

One of my all-time favorite EASY desserts are Oreo Truffles. I LOOOVVVEEEE these! Inexpensive, quick, and easy to make... but taste like pure chocolate heaven in your mouth? What could be better! So, here is the recipe! I highly recommend- enjoy!

Oreo Truffles

• 1 package Oreo cookies, crushed (about 4- 4 1/4 cups), reserve the rest
• 1 package (8 oz.) cream cheese, softened
• 2 packages (8 squares each) semi-sweet chocolate, melted (I use BAKERS) (To soften, place in microwave-safe bowl, and melt for about 2- 2 1/2 minutes, stirring every 30 seconds. DO NOT heat too long!)

Mix crushed OREO cookies and cream cheese, stir until all evenly covered and well blended.

Roll mixture into balls, about 40-48 small (1 inch diameter or smaller), or 24 "bigger" balls. 

Dip balls in chocolate, covering. (I use a slotted spoon and "shake" off the excess as I go.)

Place on wax-paper covered baking sheet. 

Sprinkle with reserved cookie crumbs.

Refrigerate until firm, at least one hour. Store leftover truffles, covered, in refrigerator.

Valentine's Day Countdown- Valentine's Day Wine, 3 Days Remaining

Well, it's getting down to the wire! You have 3 days- Friday, Saturday, and Sunday, to get your ducks in a row to plan the perfect Valentine's Day! Food (coming tomorrow) and drink usually go hand in hand to make the dinner that you are sure to have at some point on V-Day! So, whether you're going out to eat, cooking for him/her yourself, or are just having a champagne and desert kind of party... we've got you covered with inexpensive wine ideas for it all!

Wine

Stella Rosa

• Around $10-16 a bottle, Stella Rosa is my all-time favorite! It is a sweet red wine, so, unlike most red's, this one is chilled.  It is pinkish when poured into a glass, like a rose wine. Sweet and oh-so-good, this wine would go perfect with appetizers like just simple cheese and crackers (also my favorite!), or alone as well!

Da Vinci Chianti

• Around $13 a bottle, it has high notes of fruit like cherries and raspberries. This wine would go perfect with a pasta marinara dish!

Yellow-Tail Shiraz-Cabernet blend

• Around $5-6 a bottle, this is a very acidic wine. With notes of deep plum and ripe raspberry, this wine is great with rich foods like hearty stews or spaghetti and meatballs. Yum!

Relax Riesling

• Around $9 a bottle, this Riesling is drier than many of the sweet Rieslings out there. It has flavors of apple, citrus, and peach floating around in it, but is very well balanced. This wine would go perfect with a seafood dish, or anything lighter. Want wine before or after dinner? This one is perfect by itself too!

 Marco Negri Moscato d'Asti

• Around $15-18 a bottle, this wine is light and rich. It has a fruity taste that is balanced beautifully with sweetness and it's acidity. Slightly fizzy, so it goes perfect accompanying desserts!

Mirassou Pino Noir

• Around $8 a bottle, this wine is ohhhh so smooth. It goes great with a good steak dinner.

the Little Penguin Pinot Noir

• Around $6 a bottle, this wine has faint cherry aroma's, as well as a darker oak, and a nice dark red color. It has a slight fruity flavor as well. This wine would go good with some candy- we're thinking chocolate, caramel, and peanut-butter! Time to break open the box of candy you got.

Barefood Moscato

• Around $6 a bottle, this is a nice, inexpensive, sweet wine. It is fruity and fizzy. Would go great with a balsamic vinaigrette salad! Nice to just sit outside (weather permitting!) and drink, also.

Menage a Trois California Red

• Around $8-11 dollars a bottle, this red wine is a combination of Zinfandel, Merlot, and Cabernet Sauvignon. So, this wine has flavors of all of them, such as blackberry, raspberry, and the likes of fresh, ripe fruit. This red wine would go perfectly along side grilled meats or chicken!

Andre Champagne Spumante

• Around $10 a bottle, this champagne has a sweet and fruity taste. It sparkles and will be perfect to toast the night, or any other fun surprises you had in store on Valentine's Day!

Valentine's Day Countdown- Valentine's Day Proposal Ideas, 4 Days Remaining

Valentine's Day is one of the top most popular days of the year to propose to your significant other. So, whether you are planning on proposing, want to get ideas for a later date, or you're just dreaming about all the different ways this COULD happen :), here are some fabulous ideas for the ultimate proposal.

• Take her back to where you first met, wearing the same thing you wore the day/night you met... or, along the same lines- Go where you went or do what you did on your first date! 
• Give her a photo album full of pictures in order from when you met, until the most recent. On the last page, print "Will you marry me?"... and make sure to leave space for a picture taken of the newly engaged couple shortly after the "YES!". (You can buy blank albums, scrap-booking paper and supplies, as well as get pictures printed, at any mass retailer (such a Wal-Mart or Target), or one that specializes in scrap-booking and supplies. My favorite? One like this one. Perfect!
• Put the ring in another "gift" for her- chocolates box, at the bottom of tissue paper of a wrapped gift... the possibilities here are endless!
• Have her go on a treasure hunt! This is by far one of my favorite ideas- I think it's highly personable, cute, and she will have such high anticipation the whole time! Lead her on "clues" around town, around the house, around anywhere- for a week, a day, an hour... whatever you want. The last clue should lead to you, down on one knee with her ring!
• Spell it out for her! In the air (yes, hire someone to stream it behind their plane!), in the ground/sand, or, even in food!
• Have a radio message go out to her. Just make sure her radio is on the right station... then have them play "your song" (don't have one? visit my Valentine's Day playlist page for songs that would be perfect!). Dance with her during the music! How romantic.
• I also LOVE this one! Surprise her with a couple's photo shoot at a local photographer. Midway through, as her to marry you on one knee! Just make sure the photographer is ready- what better way to capture the moment!
• Take her on a romantic carriage ride (you know those that you can have drive you around town/the block/wherever?)... at the end, get down on one knee. What better way to have your "princess" feel like Cinderella?!
• Take her, blindfolded, to a nice picnic, somewhere secluded!

So! There you have it- some great ideas to plan on getting down on one knee... or at least have you thinking and planning for the day, Valentine's Day, or whichever day you choose!

• Have a fully-charged cell phone, you'll both have TONS of friends and family to call!
• Be yourself. Don't do anything really abnormal or out of your comfort zone. This is the guys' day too!
• It's okay to be nervous (both of you!)... it is a huge step in any relationship, and one that shouldn't be taken lightly!
